In these climate-challenged times, we should optimize our resources, especially in the food production chain. In his talk, Lars-Henrik Lau Heckmann, one of the world's leading experts in the insect industry, wonders why Western countries do not exploit the potential of insects. Today, eating insects might seem a culture shock. However, the environmental and economic benefits deriving from this choice could make us change our mind.
