After wandering the culinary scene of Europe for thirteen years, earning Michelin stars and winning awards left and right, learning from the best chefs and perfecting his own signature, Christopher Schønefeld left the big-city gourmet world and moved to Juvet Landscape Hotel in a remote village of Norway. He was very happy to see loads of top-quality local produce enter his kitchen. Though something was not quite right… And then it struck him. There was this bizarrely ambiguous ingredient, universal and local at the same time, that he had been using wrong. That awareness radically changed his cooking.
