It's not just a new idea, but a concept to export in Italy: food personalization, and in particular a concept store as " Just Salad".
I would like to know what could be for you pro and con...

Also, most restaurants offer personalized food, as you can always add or remove foods from your specific menu. But in a concept store or fast food restaurant people don't have that much time and don't like to answer too many questions about their order.
You have to see yourself if this works in Italy. For example Subways brutally failed in germany, because most people here do not like to chat for hours about ingridients and what else.
I have doubts that the average customer wants more choices than he already has. Most people get confused by too much choice. They already have to choose a lot in supermarkets, when going out for lunch or dinner they want to relax and want to have a limited choice. And they want to be suprised by the restaurant and discover new things.
I believe it can give your restaurant a little attention, like it did with just salad. But, if you had a hard or busy day, do you really want to spent that much time on your order? Plus the additional waiting time? Plus the risk that you just believed you had taste and your own menu composition turns out to taste like crap?
Personalized food sounds good, but the more you outsource your own work to the customer, the more your business loses it's "personality". And once the customers are bored of doing what used to be your job before, they gonna move to your competitor, who has this special composition or secret recipe they do not want to live without anymore.
I personally prefer to be a guest, not a cook-waitress-customer mutant. And i want a restaurant to sense my desires or wake them. Thats what i pay for. I don't want to pay for doing the work and losing what makes a restaurant special.

So this is pretty much like Chipotle or Subway, where you can choose what you want in a sandwich or in a burrito?
