What are appropriate organisms to use in educational demonstrations?

What are appropriate organisms to use in educational demonstrations? Plants, or Sea Sponges, or Anemones, or Jellyfish, or worms, or insects, etc? Or none whatsoever? What is your line? Are plants suitable but animals not? Or are animals suitable so long as they do not have neurons? Or are animals with neurons suitable so long as they do not have a centralized brain? [question of Timothy]

    Apr 16 2012: You should go with the simplest creature possible to demonstrate the principles you want to teach. Ideally, we would actually like to use marine creatures with simple neural nets like Anemones and Jellyfish, but the marine husbandry requirements make deployment in most classrooms infeasible. Insects are easy to rear, easy to feed, easy to anesthetize, easy to obtain, and have relatively simple nervous systems (1 million neurons total vs 100 billion for us). I think the vertebrate/invertebrate line is a useful starting point, though I wouldn't feel comfortable doing educational experiments on cuttlefish or octopi.

    May 7 2012: One does not have to use dissection in classroom unless it is necessary to convince the audience.
    Galvani demonstrated that neurons use electricity, and did not have to dissect any frog,
    (Frog was presumably killed in preparation of a dinner ?) His experiment was easier to see, without a microscope
    and playing music (just for cheap effect) appears sadistic.
